How to make homemade pasta
Our vegetarian cannelloni experiment, pasta made from scratch. We didn't use a pasta machine. Just a rolling pin.

INGREDIENTS
Measure 200 grams flour.
Add 2 large eggs.
Mix with fork.
Ready to be rolled
Roll until pasta dough is as thin as possible.
Freshly cut pasta squares. I used a knife to cut the squares. Boil for a few seconds before filling. Our first try. They were a bit thick, so more rolling next time
Mozzarella, slice these and add to salad
Chopped onion, basil and spinach with minced garlic for salad filling
Also add a handful of grated parmesan. Salad filling ready! Made loads so daughter could snack while we cooked.
Sprinkle parmesan on tray. Then place pasta squares onto tray. Spoon a bit of tomato sauce onto pasta squares. Then spoon filling onto square and roll.
Rolled cannelloni
Spoon tomato sauce on top. Used a bottle of Ragu, but I normally make sauce from scratch.
Homemade béchamel sauce, will do a separate guide. My daughter made this, was lovely. But you can always buy a prepared bottle.

Bake for about 30 mins
Hand made pasta with mozzarella is a gooey version, but was yummy
- 200.0g Pasta flour
- 2.0 Large eggs
- 2.0 Big handful Spinach
- Mozzarella or ricotta cheese
- Grated parmesan
- Bottle fave tomato sauce
- Fresh basil
- Garlic clove minced
- 1.0 Chopped onion
