This Ginger Ale is a delicious, easy, natural drink that can be carbonated or mixed with club soda, or drink as is. Much better than store bought. Use honey for a great cold and throat soother.

In a 2 quart or larger pot, Stir together the ginger, water, lime juice, sugar and vanilla.

Bring the mixture to a boil then allow to simmer for 30-40 minutes.

Strain the mixture in a fine mesh strainer or through cheese cloth into a pitcher.

Press all of the good liquid through the strainer.  If using raw honey in place of sugar (for a great cold/cough remedy), then stir that into the liquid while it is hot so the honey can dissolve.

  • 1.0c Sugar or honey
  • 4.0c Water
  • 1.0tsp Vanilla
  • Seltzer or club soda
  • 2 quart pitcher
