Peel your ginger. I gently scraped the peel off with a paring knife.
Slice the ginger.
I used a Rubbermaid container to measure one part.
Put the peeled, sliced ginger in a pot.
Measure out two parts water.
Simmer the ginger water for 5 minutes.
Remove from heat. Cover and let stand for one hour.
Strain the ginger from the water.
Add one part sugar to the ginger water.
Stir over low heat until the sugar is completely dissolved.
Let the ginger syrup completely cool before making the ginger ale.
The next part is based on taste. I used about 1/3 part ginger syrup.
Add some sparkling water. Don't forget to leave room for ice!
A squeeze of lime. (I picked my limes too late and they turned yellow).
Add ice.
Give a quick stir. Enjoy.
