Blend strawberries in a food processor until smooth.    Note: You may cook the berries before blending. I prefer to keep them raw.

Add 2 cups of apple sauce and blend until smooth.

Add honey or agave to taste. 4 tablespoons of honey worked for me. Blend further until everything is mixed well.     You may want to add more or less or omit honey or agave altogether.

Place non-stick baking mat or parchment paper on dehydrator trays. Spread mixture to desired thinness using a spatula.

Dehydrate at 120 degrees for 6-8 hours. Time varies depending on thickness, unit and drying temperature. Check for dryness. Fruit roll ups are done once mixture is no longer sticky, just a bit tacky.

Once done, Remove from dehydrator and let it cool completely. Transfer to a cutting board.

Use a pizza cutter to cut long strips. Remove  parchment paper from fruit roll ups, if wax paper used for dehydration. If not, simple cut into strips.

Cut parchment paper into strips and roll them up into the fruit rollups. Use tape to keep them closed. Enjoy and share!  Store in an air tight canister.
