Essentially prepare all the ingredients and toss into the crockpot (except for the cheese), cook on high for 2 hours or low for 4 hours. I'll walk you through the recipe step by step next »
First, chop your chicken into cubes
Heat a lightly oiled skillet (I used 1 tsp vegetable oil) to cook the chicken
Toss the chicken on the heated skillet
Cook each side ~ 7 minutes or until chicken is opaque and white.
Here chicken is more or less cooked - this will be cooked further in the crockpot so don't stress too much if its still slightly pink.
Dice your tomatoes (or use canned tomatoes)
Toss the tomatoes into the crockpot.
Toss the cooked chicken into the crockpot.
Toss the canned corn into the slow cooker
Toss the diced onions into the crockpot.
Mince two garlic cloves and toss into the crockpot
Add your drained kidney beans into the crockpot.
Add the black beans into the slow cooker.
Add 1 tablespoon tomato paste.
Add 1 tablespoon chipotle powder and 1 tablespoon cumin into the slow cooker

Be sure to mix the ingredients around.
Cook on high for 2 hours, or on low for 4 hours.
This makes a lot of chili! So pack your lunch for the week.

- 8.0oz canned whole kernel corn (1 can)
- 1.0 small onion diced
- 2.0 garlic cloves, minced
- 16.0oz (1 can) black beans
- 16.0oz (1 can) kidney beans
- 1.0Tbsp canned tomato paste
- 1.0Tbsp chili powder
- 1.0Tbsp chipotle seasoning
- 1.0Tbsp cumin
- 1.0c Shredded cheese (optional)
