Now for the judgement part: add the creme fraiche (or yoghurt). The trick is to add enough to bind the fruit but not too much.  I've added a couple of dessert spoons here...

This often happens: the fruit partially binds, but sticks to the side and the blade rotates underneath doing nothing. No worries...

Blitz again.  If possible (and secure), tilting the blender sometimes helps to get the fruit to bind properly and not stay stuck to the sides.

Voila! All the fruit pieces have blended away and the "ice cream" has formed!

Serve immediately (it melts quicker than regular ice cream).  If you have guests, you can improve the presentation!

  • 170.0g Frozen fruit (here I use raspberries and mango)
  • 2.0Tbsp Creme Fraiche (low fat is fine). Can use Greek yogurt
  • 1.0tsp Honey (optional)
  • 1.0 Food processor
