Preheat oven to 375* & place cupcake liners in a muffin pan & put aside.
Mix flour, baking soda, baking powder and salt in a medium mixing bowl.
In another bowl mix together the mashed bananas, sugar, egg & coconut oil.
Add to the flour mix & stir until just moistened. DO NOT OVER MIX!!
Add batter to muffin liners & sprinkle with coconut.
Bake for 20 minutes or until toothpick comes out clean.
I made 9 with coconut sprinkled on it & 3 w/o because I didn't know what the little one would think.

- 1/2c Unbleached All-Purpose Flour
- 1.0tsp Baking Soda
- 1.0tsp Baking Powder
- 1/2tsp Salt
- 4.0 Bananas, mashed
- 1/4c White Sugar
- 1.0 egg, lightly beaten
- 1/3c Virgin Coconut Oil, melted
- Unsweetened ShreddedCoconut to sprinkle
