Combine dried fruit in a blender, today I used figs, dates, and kumquat! Blend until mixture is dough like.
Heat pure maple syrup and peanutbutter is a small saucepan.
Just until melted and smooth!
Combine oats and dried fruit mixture in a large bowl.
Beat in peanut butter, maple syrup, and the egg white. (This recipe does contain raw eggs, if that worries you, replace egg white, with a few extra tbsps of maple syrup!)
Press into a silipat or parchment lined baking sheet!
Chill in the fridge for an hour before cutting into 12 bars!
These little bars have only 164 calories each, 3 grams of protein, 4 grams of fiber, and only 0.9 grams of fat. They are a perfect on the go morning treat!
