Cover beans with cold water, cover, and let soak overnight.
Add oil to large soup pot. Dice the vegetables, add to pot and sauté about 10 minutes.
Add the garlic and bay leaf. Sauté another 2 minutes.
Add the chicken broth and beans to the pot.
Add the game bone to the pot, cover, and cook over low heat for 3 hours.
Remove bone and meat and allow to cool slightly. Dice meat and return to pot.
