For The ashta 1 ltr crème liquide.(4 cups). bread 3 cups (150 g). 2 tbsp maizeina (corn flour) 2 tbsp sugar. 1 tbsp orange blossom water
For the cheese dough: 125 g Mozzarella di buffalo. 50g semolina (1/4 cup+1tbsp). 1 tbsp sugar. 1/4cup water
Then only at the end add 1 tbsp orange blossom water. Otherwise it will loose its flavor if heated for a long time
Heat Water and sugar untill sugar melts and the water is simmering
Mozzarella ball drained
Add over water-sugar
Until it melts and become stretchy
Start adding the semolina and stir.
Continue untill all the semolina is incorporated. Cook 1 more minute.
Add 1 tbsp Orange blossom water. Incorporate in the dough
Put the dough on a kitchen plastic or on a silpat
Give it a rectangular form
Cover with a parchment paper and roll
Untill you have almost 40/22 cm
Put the ashta
Roll
Brush with orange blossom water
Cut 2 cm bites
Dip in the orange blossom water the n in the pistachios
