Cut avocados in halves

Take out the seed by chopping and lifting the chef knife in the middle of the pit

Just like that

Release the flesh with a spoon

Dice the avocado

Chop the garlic

After a few chop the skin would cone right off

Chop the shallots too

Put everything in a mortar or a bowl and mash away

Add lime juice and salt to taste. I personally like adding some extra virgin olive oil too.

Scoop out and serve
