Cook two cups lentils with three cups water (to start with). Add water as needed.
Cook tomato on medium high heat until ready to peel.
Peel tomato.
Chop the tomato into small pieces.
Cook as much rice as you want to eat with the lentils and beef.
Brown one pound ground beef.
Finely chop a quarter to half a red onion.
Smash one clove of garlic with a little salt.
Drain beef and set aside.
Sauté onions and tomatoes in same pan used for the ground beef. Add garlic shortly after.
Add meat to onions, tomatoes, and garlic. Add salt and pepper to taste.
Add 5 1/2 oz of tomato juice.
Add meat mixture to lentils. Add one bay leaf and salt and pepper to taste. Simmer five to ten minutes.
Serve over rice and enjoy!
