I prefer to use challah bread in this recipe because I love the sweetness of it, but you can use any leftover bread
Slice the bread not too thin (so it will not fall apart when dipping in egg mixture) and not too thick (so it will absorb better). About 1"in. This recipe is for 6 slices. Double the amounts for more
Add 1/4 cup of cream into 4 eggs. For lighter version use milk
1 tbsp sugar and pinch of salt
Whisk well
Melt butter in the frying pan on a medium/low heat. Be careful not to burn it. It will change the taste of a bread
Dip each slice in the egg mixture both sides. The fresher the bread the quicker you need to be. If bread is hard you can leave the slice to soak for about 15 seconds. If it's fresh dip it fast and fry
Fry on one side uncovered
When you turn sides sprinkle with grated cheese on top and cover with lid
And it's ready to enjoy. Variations: top the bread with sliced avocado or smoked salmon. You can eat it with cottage or salsa
