How to make green tea cookies
This recipe is a little less sweet and prefect for a cup of green tea. I will try add a little more sugar and green tea powder next time for stronger taste.
This is for experiment 1 ingredient. I use pink crystal salt but if you use normal plain salt then use only 1/3, if not will be too salty.
In a large bowl or the bowl of your stand mixer, whisk together the powdered sugar and powdered green tea.
Add in the butter, beating on low speed until smooth and uniformly green in color.
Add in the egg yolks one at a time, beating until combined.
After 3 egg yolks.
In a medium bowl, whisk together the flour and salt.
Gradually add the flour mixture to the butter mixture half at a time until combined and the dough comes together.
Form the dough into a ball using your hands, and then press slightly to form the ball into a disc.
Wrap in plastic wrap and chill 30 minutes to an hour.
After 1 hour.
It is easy start with a small dough so I can control the crack and touch up them make it look nicer.
On a floured surface, roll the dough out to about 1/2″ thickness. Cut out cookies using your favourite cookie cutter.
Gently press the edge make it look nicer after using cutter.
Preheat the oven to 350 degrees and line a baking sheet. Place the cookies on the parchment-lined sheet and bake 12-14 minutes or just until beginning to brown.
Cool on a wire rack. Makes about 42 small cookies, depending on the size of the cookie cutter that you use.
I added this as experiment 2, the only different of this is 2 tbsp green powder, 1 full cup of powdered sugar. And put in refrigerator overnight, take it out next day chill for 15 minutes.
Comparison between Recipe 1 & 2, the second one looks greener.
The thickness of cookies taste like more crispy.
I also experiment with some design on top make the cookies look more interesting.
Best match for my green tea!
