Add garlic when the onions have juice in the pan. Now it is smelling good!!
Time for wine!!! Allow to reduce.
Then add tomato paste and tomato juice to loosen the paste. Looking for a consistency to coat the meat! Add oregano to taste remember we are not doing spaghetti. Add meat back and cook for 25 mins.
