Start with bacon!! Cut into small pieces and render fat. Set bacon bits aside for later and reserve fat
Take Brussels sprouts and blanch (boiling water then shock with ice water) them for 5 mins or tender
After draining them, Next take a pan and bacon fat and sauté them to bring them back up to temp then set aside
In same pan pour in heavy cream and reduce
Once you reduce it to the consistency you want ( mine is thick enough to coat Brussels sprouts) put bacon in and salt and pepper to taste
Cover Brussels sprouts and stir in adjust salt and pepper to taste and enjoy!
