After draining them, Next take a pan and bacon fat and saut\u00e9 them to bring them back up to temp then set aside

In same pan pour in heavy cream and reduce

Once you reduce it to the consistency you want ( mine is thick enough to coat Brussels sprouts) put bacon in and salt and pepper to taste
