DISCLAIMER: This is my Grandma Payne's recipe for the macaroni salad she would always bring to cookouts and parties. All measurements are "best guesses" as she never measured a thing!
Here's Grandma's secret combo for her macaroni salad: a mixture of real mayonnaise and Marzetti's coleslaw dressing. Seriously amazing!
Cook and drain macaroni according to package directions. DO NOT rinse macaroni with cold water. You want the noodles hot!
Add 1/2 cup mayo, then add 1/4 cup of the secret ingredient: Marzetti's Coleslaw Dressing.
Stir well.
Add some parsley flakes. Stir well.
Cover and place in the fridge for a few hours or even overnight.
Meanwhile, start chopping veggies. You have to chop the pieces very tiny to meet Grandma's standards.
Grandma dehydrated her veggies before adding them to the pasta. She would layer veggies on paper plates with the most saturated veggies on the bottom layer. Start with red pepper.
Add a plate, add green pepper.
Add a plate, add cucumber.
Add a plate, add celery.
Add a plate, add radish.
Add a plate. Now put in fridge for a few hours or ideally overnight.
Later, or the next day, remove pasta from fridge and add another 1/2 cup of mayo.
Add 1/4 c coleslaw dressing.
Stir well.
Time to add the veggies!
So colorful!
Stir well, adding salt and pepper if desired.
Serve and enjoy!
- 1.0 Box macaroni
- 1/2 Cucumber
- 1/2 Red pepper
- 1/2 Green pepper
- 2.0 Radishes
- 1.0 Celery stick
- Parsley flakes
- 1.0c Mayo
- 1/2c Marzetti's Colesaw Dressing
- Salt and pepper
