Add sausage to preheated pan
Brown (I removed some of the excess liquid); set aside
Put mushrooms into sausage pan
Brown then set aside with sausage (I added some olive oil to keep everything from drying out)
Smash garlic; remove peel
Garlic power trio! (I dice some, break some up and leave some whole)
Brown lightly in olive oil then (prepare yourselves!)...
The spinach gods were smiling upon me tonight! I added a splash of prosecco and turned up the heat then...
Once you've tamed the spinach beast stir a bit to let it all sauté evenly
Mix in the sausage and mushrooms
Add heavy cream then cook down
Mix in mozzarella; make sure to stir evenly and break up the mozzarella so it doesn't make an indestructible spinach/mozzarella ball (trust me - the voice of experience...)
Mmmmm, I could eat this like soup
Boil the pasta but pull while al dente (it will cook more in the oven); mix pasta and mixture together in pregreased baking tray
Sprinkle with mozzarella, Parmesan, pepper, and parsley
Cover her up snugly and put her in the oven for 30-45 minutes on 375 (check frequently and remove cover for the last 5 minutes or so so it browns nicely)
If you're worried about the Sasquatch getting to your oven, don't worry - your dog (who otherwise spends the rest of his life sleeping on the couch) will NOT let that happen!
