Combine chopped garlic, lime juice, oregano, olive oil, salt & pepper in a bowl. Mix well.
Fry bacon strips, drain
Preheat oven to 375 degrees. Butterfly chicken breasts, cut up goat cheese and spread evenly on one side of each breast
Add a strip of bacon to each breast, close each one and fasten with a toothpick. Pour mixture over chicken. Cook for 20-25 minutes or until chicken is no longer pink when cut open slightly.
ENJOY! I made my chicken alongside garlic and onion mashed potatoes and mixed veg, but it goes well with just about anything. Yum yum!
- 4-5 Chicken breasts
- 4.0 Cloves of garlic
- 6.0Tbsp Olive oil
- 1.0Tbsp Dry oregano
- 1.0Tbsp Lime juice
- Salt and pepper to taste
- 1/2 Package of pepper goat cheese
- 4.0 Strips of bacon
- 4.0 Toothpicks
