Clean potatoes and boil them in salted water till they are soft...you can check if they are ready by poking them with the tip of a knife. If it cuts in easily, they are ready.
Drain the potatoes,then cool them for 10 minutes. Remove the skin with a knife and mash the potatoes with a potato masher.NO BLENDER! Now add flour that should equal 1/4 of the amount of the potatoes.




Add one egg yolk...and a pince of salt

Mix together using your hands working the dough for about 10 minutes until it's mixed together and you have a nice consistency.

Add more flour to the surface if needed and roll the mixture with your hands to reach 1 inch in diameter.

Cut the roll into small pieces about 1inch long.

Roll each piece on the back side of a fork to make the gnocchi groove.


When your ready to cook them, place them in salted boiling water until they float. 2-3 minutes
- 17.5oz Red potatoes
- 4.5oz Flour
- 1.0 Egg yolk
- 1.0pch Salt
