Sugar, lemon rind, cloves and for the authentic flavor.. 4-5 grains of mastica (Greek or oriental stores) or on line. If not, then vanilla bean. Add water bring to a boil
Peel and core the fruits. Put the peel, the seeds and the fruit in the boiling syrup. Cook until tender (30mins). Then continue to cook on low untill the color becomes deep Amber.
It is best kept in a tight jar in its syrup.
Serve with cream, ricotta or thick Greek yogurt
