STEPS
INGREDIENTS
Add carcass and 7 cups of water to a medium pot. Cook over medium heat
Gather vegetables
Cut zucchini into bite size pieces
Do the same for the carrots
Cut the celery
Once carcass starts to boil, turn the heat down and simmer. It should cook for at least 1.5 hours. You can cook it longer if you want a stronger chicken flavor in the stock
Chopped celery
Cut the onion in half
Chop onion and add to celery
Cut veggies!
Add olive oil to a saucepan
Add celery and onions.
Carcass is done!
Remove all the bones and chicken pieces from the stock. I also strained the broth to make sure there wasn't any unwanted pieces . Do not throw the carcass away!
Add veggies to stock
Using your hands, remove all the chicken meat from the bones.
Cool celery and onions till slightly translucent.
Add onions and celery to stock
Boil water for pasta (about 3 cups)

Cook pasta al dente. Time depends on pasta

TA-DA! Chicken noodle soup! Let it cook for a few more minutes then dish up! It was delicious!

- 7.0c Water
- 1.0 Chicken carcass
- 2.0 Zucchini
- 1/3c Baby carrots
- 1/2 Onion
- Salt and pepper to taste
- 1/2c Gluten free pasta
- 4.0 Stalks of celery
