INGREDIENTS
Start with your butter, 12 TB
Over medium low heat, melt butter until it becomes fragrant and browned. This may take a few minutes. Up to ten
While butter is browning, in a mixing bowl: 2 cups GF all purpose flour blend, 3/4 tsp baking soda and 1/2 tsp salt. Check you flour for added xanthan gum. If yours doesn't have it added, add 1 tsp
3/4 cup each: brown sugar and white sugar
And your chocolate chips. I used white and semi sweet as that's my daughters favorite. She is the one in the family w the gluten sensitivity. About a cup each
When your butter is browned, sit aside to cool. About five minutes
Mix your dry ingredients
Once the butter has cooled, add 2 TB milk and 2 tsp vanilla, to the butter
Then one egg. One egg yolk
Mix the browned butter mixture well
Add to your dough and mix until it comes together. If it's a little dry and crumbly add a little more milk until you get the cookie consistency
Preheat 350° and drop cookies. Leave some space between them as they will spread when baking
About 13 minutes and they're done. I like to start testing at 10 minutes
Once they crackle and give off a caramel sheen, they're ready
