INGREDIENTS
Soak 1/2 cup oats in 5 cups pure water. (Non Gerson folks may add vanilla to taste.) Let soak 10 minutes, then blend on high for 1 minute.
Strain your oat milk through a fine mesh stainless strainer (or cheesecloth).
Store oat milk in glass container (keeps well for 3-4 days). You will need 1.5 cups of the oat milk for the pancake batter.
To make oat "flour," put remaining 2 cups of oats in Vitamix and blend on setting 4 until finely processed. Combine oat flour with 1.5 cups oat milk, and your applesauce. Drop onto hot griddle.
Flip pancakes when top side appears bubbly and edges are visibly cooked (a couple minutes on each side usually does the trick).
The second batch always comes out better!
Top warm pancakes with 1 TB or so of pure VT maple syrup, if desired.
Note: to heat the maple syrup, place glass container of syrup in a slightly larger bowl of hot water. (no microwaving to heat anything on Gerson Therapy)

- 2.5c Organic rolled oats
- 6.0oz Organic, home-made applesauce
- 5.0c water (for making oat "milk")
- optional: a TB or so of pure VT maple syrup
- for Non Gerson folks: 1/2 cup organic blueberries
- for Non Gerson folks: 1 tsp. organic cinnamon
