How to make gazpacho

Mix all ingredients...tasting along the way. Refrigerate for at least two hours before serving. Even better then next day!



  • Large bottle of V-8 juice
  • Lots of Roma tomatoes, chopped
  • 2.0 Peeled cucumbers, chopped and seeded or not
  • 1.0 Green bell pepper, chopped
  • 1/6 Red onion, minced
  • 1.0 Fresh jalapeño, minced
  • Juice of one lime
  • Fresh chopped cilantro to taste
  • Salt and pepper to taste
