Boil 2-3 cups of water in a saucepan.
Cut off the tail end of the bok choy and disgard. Slice the bok choy into thirds. Wash thoroughly, drain and set aside.
Heat a non-stck fry pan then coat with oil. Fry the egg and set aside.
Add the bok choy to the frying pan. Stir fry for 1 minute. Add 1 cup of water (either boiled or room temperature) and goji berries. Allow water to boil. Cook for 1 minute.
While the bok choy cooks, cook the Fuzhou noodles in the sauce pan (with boiling water). Cook noodles for 1-2 minutes.
Transfer the noodles into the frying pan (with the bok choy) and cook 1 more minute. Salt to taste.
Serve in bowl and enjoy.
