How to make funnel cakes - like at the fair

Heat your oil, your oil will need to be at 350 degrees. NOW I said to use one quart of oil but this will vary depending on how big your pan is. But your oil will need to be pretty deep for the batter.

BECAUSE if you don't have some kind of circle protecter the batter will go everywhere. Or it will be the shape of the top of your pan. You can also adjust the tin foil to make smaller funnel cakes.

The foil also helps it from sticking to the sides of the pan. It's pretty easy to do so I highly suggest you do this :D

Mix your salt, baking soda and flour together in a bowl set aside.

Cream eggs, sugar, vanilla and milk in a large bowl.

Okay, now this is my little tip to you. Find an old ketchup bottle and use a funnel to pour the batter into the CLEANED OUT ketchup bottle. I find this works great for squeezing out the batter.

You can also you a large zip lock bag and cut a small hole in the bottom corner. But I REALLY like the ketchup bottle because its so easy to pour and it doesn't make a mess.

Hold the bottle of batter close to the surface of the oil, and squeeze a generous half a cup of the batter into the oil while making a circular motion.

Gently with your tongs press down the top of the funnel cake. This allows the oil to get on top of the funnel cake as well. You won't have to do this constantly but every minute or so.

After waiting about 4 minutes flip your funnel cake by using your tongs and a wide spatula. Cook the funnel cake for another two minutes, place on a plate with paper towels to drain oil.

And you're done! Sprinkle with confection sugar :)! This is my ABSOLUTE FAVOURITE FAIR FOOD! But, why pay 5 bucks when you can make it at home! :)
