How to make fresh & simple chipotle salsa

Simple, fresh chipotle salsa made with just a few ingredients. Includes bonus video showing how to easily dice an onion.

The ingredients minus the chipotle peppers.  TIP: You can buy chipotle peppers canned in adobo sauce. I normally only use 2 so I freeze the rest  in packs of 2 to thaw later.

Dice the tomatoes. I like to cut them off as shown.

I generally discard some of the mush inside.

Then turn and slice the other way to complete the dice.

Chop some cilantro - I discard some of the stems, but chop the rest up with the leaves. If you're bored you're welcome to peel individual leaves.

Squeeze juice of a lime into the salsa.

Now for some heat! To finely dice the jalape\u00f1o I cut the stem and tip off then slice to remove the pepper's sides.

Now, I finely dice the chipotle peppers. I just cut the the stem off and dice everything including seeds. These are mushy so just chop chop the best you can and you'll be fine.

Add the onions to the salsa, stir it up & enjoy!! TIP: allow salsa to sit for 30 mins to an hour before serving to allow flavors to develop
