Crack an egg
You want to get it beaten as well as you can, try not to leave any separate bits of yolk or white.
Add the milk - you want a ratio of 50 egg to 50 milk.
Add the sugar.
Beat well.
Tiny bit of mixed spice (or nutmeg).
Bit more ginger.
Loads of cinnamon.
Mix it up - don't worry about the lumps.
Put your frying on the heat.
I have briochettes so will show you how to cut them. If you have a brioche loaf or normal bread simply cut slices then halve them.
Cut off the end - as little as you can to remove the crust.
Then cut 1cm slices (I can only get 2 out of each briochette).
Place the slices into the wet mix.
Melt up some butter in your pan. Don't burn it, heat should be low.
Flip the slices to coat both sides.
Once the butter is melter and still pale...
Add your slices to the pan and turn the heat up to medium-high.
I you have a little mix remaining...
Pour it on top of the slices, this will crisp up.
When nice and browned, flip to cook the other side.
When both sides are done, plate up.
I love maple syrup so on that goes. You can also add some thick cream and berries, but I forgot to take a picture so you'll have to use your imagination.

- 75.0ml Milk or cream (approx)
- 2.0Tbsp Sugar (preferably caster)
- 1/4tsp Mixed spice or nutmeg
