Mix together powdered sugar and almond flour.

Meanwhile, beat the egg whites to soft peaks.

Add in the superfine sugar, whip till peaks are stiff. (More than what I show in the picture!! ;)

If you so desire, add some food coloring at this step (I used the gels), and then sift in the powdered sugar and almond flour mixture!

Fold the batter with a rubber spatula, about 60 - 65 times.

Grab out a piping tip. I used Wilton 22.

Pipe rounds of the similar sizes one inch apart on a baking sheet line with parchment paper.

Bake for 10 minutes at 325 degrees. Don't allow them to brown, but make sure they are crispy.

Cool on a wire rack for about ten minutes, then add strawberry jam (or whatever fillings you prefer! Frosting, chocolate, fresh fruit, anything!)
