Make Freezer-Ready Breakfast Sandwiches

Preheat oven to 375 degrees Fahrenheit.
Spray ramekin cups with nonstick cooking spray.
Crack one egg into each cup.
Mix lightly. Add salt and pepper. You could also add items such as basil leaves, chopped tomatoes, or cooked bacon bits.
Place ramekin cups in the oven and bake approximately 10-12 minutes until eggs are cooked through.
While eggs are baking, cook sausage in a pan.
Slice English Muffins.
The eggs will look like this when cooked.
Set up your work station with all ingredients close at hand.
I use wax paper to wrap my freezer sandwiches. You can also place them in a ziplock bag, but keep the sandwich stacked before you freeze. Rip wax paper into large squares, one for each sandwich.
Place the bottom of an English muffin on the wax paper.
Remove egg from ramekin cup using a small spatula or knife.
Place egg on English muffin.
Add sausage.
Add cheese. I used Colby Jack.
Add the top English muffin. You can spread mayo on inside of muffin if you like.
Wrap sandwich with wax paper and seal with freezer tape.
Place sandwiches in freezer. When ready to eat, unwrap from wax paper and microwave 1-2 minutes.
Serve and enjoy!
- 6.0 Large eggs
- 6.0 Round sausage patties
- Sliced cheese (cheddar, colby jack, or swiss)
- Salt and pepper
- 6.0 English Muffins
- Ramekin or Muffin pan
- Nonstick cooking spray
- Wax paper and freezer tape (optional)

- Mayonnaise (optional)
