INGREDIENTS
Shred as many potatoes as you want. Keep all the shredded potatoes in cold water until you are ready for next step.
Bring a pot of water to boil add some salt. Drain your shredded potatoes and add to the boiling water.
Blanch the potatoes for 2-3 minutes. That's all! While that's blanching prepare a bowl with cold water and ice.
Take out the blanched potatoes.
Immediately submerge them in the ice water. This stops the cooking process.
Drain the now cold potatoes.
Put them on some paper towels and pat dry.
Once dry, put the potatoes on a tray to freeze. Make sure to spread them out.
Once it's frozen put them in a freezer bag. Make sure to mark and date the bag. They are ready to use as you would a store bought kind.
This keeps in the freezer for about a year . Its a good idea to make them in batches and keep in the freezer for future use . My family enjoys them. Hope yours does too!
