STEPS
INGREDIENTS
Onion, bay leaf and garlic
Beer. About a can worth. Any kind. Good old Bud would do it.
Tomato paste. Yes, you can use fresh tomatoes too.
Open your liquor cabinet and choose one that you like.
Cry a little.
Into the pot. If you have meat available add it before the onions and brown them.
Smelly hands.
Into the pot again.
Some olive oil
Stir
Bay leaf.
Always taste before adding to the pot. If you have port wine, add it as well.
After its reduced, add your tomato
Fry it for a couple of minutes. If using fresh tomatoes make sure you let it reduce until its fully dried.
Let it come to a boil
It's takes longer if you stare at it.
Add any extra bones you might have left from thanksgiving.
Lower the heat to a simmer.
Now the sandwich.
Cheese, ham and chorizo.
Hotdog links
In halfs
Ham, chorizo, cheese and links. In Portugal they use sausage, linguiƧa ( it's like Chinese sausage ) and sometimes salame.
Leftover turkey. This would be a "febra de porco" (a very thin slice of pork loin)
Grill your hotdog.
Flip.
Some extra for a snack.
Look if your sauce is doing well.
Toast the bread.
Make enough for everyone.
Ham
Chorizo/salame
Your "febra de porco"
Hotdog links. Or linguiƧa if you have some.
Cheese.
Close it
Mas queso.
All of them.
Your sauce its pretty much reduce by now.
Take the bones/meat, and bay leaf out.
Season with some Mexican Piri-Piri. (Piri-Piri sauce is a typical Portuguese spicy sauce)
Corn starch
Cold water
Mix
Turn the heat on high.
Season with salt, pepper and lemon juice.
Top the sandwich with some fried egg. Hard boil also works.
Some people like with just one slice of bread. Do it if you think it makes it healthier.
Salt and pepper.
You can gratin it without the egg or warm it in the oven. Not a necessary step.
Spread your plates. The healthier version on a different plate.
Refreshments.
All onto the plates
The cheese will melt just enough.
And there you go.
Eat it near the the pot with the sauce. You will need some extra.
Try to eat it without making a mess.
Done.
