INGREDIENTS
Preheat the oven to gas mark 3/160^C/325^F. Place the butter and chocolate in a saucepan and melt slowly on the lowest heat.
Once melted, transfer to a cooling rack.
Place the sugar and vanilla extract into the pan and stir.
When just combined leave to cool.
Whilst the mix cools, line your tin. I place a square piece of parchment under mine, and cut straight up from the corners.
Then, simply place tabs back to form a perfect lining.
Add the ground almonds, walnuts and eggs to the mix. Hopefully your pan is a bit bigger so it won't spill.
Here's the final mix. It's looser than brownies made with flour, so when they're done they're even gooier.
Transfer the mix into the tin, and bake for about half an hour. The top will be obviously cooked and crispy.
As you can see, it doesn't last long! Best brownie ever...

- 225.0g Chocolate (dark)
- 200.0g Caster sugar
- 1.0tsp Vanilla extract
- 150.0g Ground almonds
- 100.0g Chopped walnuts
- Choc chips or dried fruit
