Place chickpeas, herbs, lemon juice, pistachios in a vitamix and mix
Mixture should look like this
Roll into small balls
Place on a medium heat pan cook for 2-3 minutes each side
Remove pan from heat to keep warm
Tomato Salsa finely chop basil, chili and dice the tomatoes
Mix together
Yoghurty Dressing place youghurt, finely chopped mint and lemon juice in a bowl and mix
Assemble the salad adding in some avocardo
