How to make festive spiced pork loaves #healthyeating

This pork loaves are great for a high protein snack. Enjoy!

Great healthy snack and also portable so good for when you're out and about. If you don't like the spicing just leave it out or pop in a teaspoon of grain mustard instead

Start by placing 3 eggs in boiling water and cooking for 6 minutes

Take 500g pork mince, ideally organic or free range

Add 1tsp chopped sage, the zest of one clementine, 1tsp ground cinnamon, 1/2tsp ground allspice, salt and pepper to taste. Mix well

Use around 1/3rd of the mixture to line the base of 6 small loaf tins pushing the mixture up the sides as well (alternatively make one large loaf and slice once cooked).

Cut the eggs in half and place half in each tin

Finish by using the rest of the mixture to encase the eggs. Bake at 180C for approx 25 minutes until the meat is cooked

Here is the finished loaf. I eat it as a snack with raw veg sticks. Enjoy!
