Chop onion about 1/2 cup, preheat oven to 400

Mix with 1 1/2 cups of shredded cheddar cheese

Add 1/4 cup to corn tortillas


Roll like a burrito and place in pan

Add any left over mix to top

Cover with canned enchilada sauce

Add canned greened chillies

Place in oven and cook until cheese is melted and warmed through , about 15 mins

In the meantime chopped 1/2 head of green cabbage add to a bowl

Slice about 8-10 small radishes add to cabbage

Add 1 T cilantro

Add 1/2t salt

Add 1T lime juice

Add pepper

Mix well

When done get enchiladas out of oven and serve


Serve with 1/4 a lime slice

Total cals (as shown) is about 442, the enchiladas are about 208 per enchilada and the salad about 19 cal and the lime about 5, so as shown its 442
