Let's start with the wet ingredients first.
If you're using an egg replacer, make one egg substitute according to the directions on your brand of replacer. You will need this for the first mixture.
Don't forget to grate the lemon rind!
Combine the bran, milk, oil, egg substitute and lemon rind. Stir until well blended.
It should look like this. Set aside after.
In a separate mixing bowl, mix together flour, sugar, baking powder, salt and nutmeg.
Make sure it is mixed evenly.
Now add the wet bran mixture to the flour mixture, stir just until well combined.
Grab a handful of walnuts and chop away. This will be used to top the muffins with!
Carefully fold in blueberries. I also added in raisins which is optional. (My mom likes them!)
Line your muffin tin with paper muffin cups, lightly greased. (About 12 large muffins)
Divide batter evenly. You can fill them about 3/4 of the cup.
Bake for 23-24 mins or until golden brown.
The yummy smell is hard to resist!

- 3/4c Milk
- 1/3c Vegetable Oil
- 1.0 Egg or egg substitutes
- 2.0tsp Grated lemon rind (1 lemon)

- 1/2c Walnuts, chopped
- 1/3c Raisin (Optional)
