Whip up some eggs. (note: I make a lot so I can keep the leftovers in the fridge and eat them all week!)

Throw in some grated cheese!

Add some Creole seasoning.

Cook eggs over medium heat.

Scramble it all up!

When the eggs are almost done, throw in some cream cheese.

Then add a can of Rotel that has been drained.

Mix it all up, then throw in some fresh spinach.

Lower the heat, and let it simmer until the spinach is done.

Eat this yummy goodness as is, or serve it up in a warm pita pocket or tortilla! To make it extra tasty, add some crumbled bacon to the mix.
