This is made quick. Get all the ingredients out. Slice the onion, cut the zucchini & mushroom. Have them ready!
This is made quick. Get all the ingredients out. Slice the onion, cut the zucchini & mushroom. Wash the spinach & remove stems. Oregano is in the pic cause I liked the pic. :0)
Add 1tbs Olive Oil & 1/2 tbs butter to skillet.
Add sliced onion to skillet and sauté until nearly golden. I like mine a little crispy.
Add zucchini to onions. Add 1/2 tsp each salt n pepper. Stir up!
Scramble up 1 egg and 1 egg white.
I read that crushing oregano in your palm releases essential oils & flavors. So crush up 1/2 tbs oregano and dust over onion & zucchini mix. Stir it up!
Add chopped mushroom to mix. Stir it up!
Place spinach leaves in skillet. Gently fold into mix until kinda wilted.
Add the egg mix to the mix. Sprinkle in a dash of salt & pepper. Stir it up!
After the egg is done cooking. Turn off stove. Remove from heat.
Add a handful of cheese!! (I love cheese) I used a mozzarella/cheddar mix. Do not stir it up!
Cover with a lid. My lid isn't dirty. That's the heat fog from the awesomeness of the dish!
While the cheese is melting get the bread and toast it. Also, cut 3 slices of tomato & cut them in half.
I do not put anything on the toast. As far as a spread. I don't think it needs it.
It's all melted!! Yummmmmmm!!
Now place your toast on your plate. Put 1/2 of the scramble on one & 1/2 on the other. Garnish with the tomato. All done! Voila!!
