INGREDIENTS
Preheat oven to 350F
Beat together cake mix, pudding, Greek yogurt, oil, water,eggs, and vanilla.
Fold I'm diced strawberries (1 cup)
Distribute batter onto the muffin wells. Bake in preheated oven for 18-22 min or until tops of cakes spring back when slightly touched.
Remove cupcakes from muffin tins and allow to fully on a wire rack so you can prepare your frosting.
Beat the butter on medium-high speed for about 5 min.
Turn the mixer down to low and gradually add in the confectioners' sugar until completely incorporated. Add in vanilla 3tbs of strawberry purée, mix until incorporated.
Gradually finish off by adding 2tbs more. Turn the mixer med/high speed and beat mixture for 4min until fluffy. ••note that adding more than recommended 5 tbs could result in thinner frosting
Pipe the frosting onto the cooled cupcakes.

- 1.0 Package French vanilla cake mix
- 3/4oz Package instant vanilla pudding mix
- 1.0c Greek Strawberry Yogurt
- 3/4c Vegetable oil
- 1/2c Water
- 4.0 Eggs
- 2.0tsp Pure vanilla extract
- 1.0c Fresh diced strawberries
- Frosting
- 2.0c Unsalted butter room temp
- 24.0oz Confectioners sugar
- 2.0tsp Pure vanilla extract
- 5.0Tbsp Fresh strawberries puréed
