First make a side salad: mix arugula, cherry tomatoes and balsamic dressing (olive oil+balsamic vinegar+salt+pepper)
I love to make more spread then I usually need just because I can store it in a fridge and use in sandwiches or with crackers😋. Blend 1 cup walnuts with 1/4 cup olive oil, add course salt to taste
Keep refrigerated in air tight container up to one month
Choose two slices of your favorite bread (dark bread will work better with the nutty flavor). Spread thin layer of nutty spread on both slices of bread
Top with arugula
Then thin slices of cucumber
Then add feta cheese
Cover with the remaining slice of bread and cut diagonally
Arrange the sandwich beside the arugula salad and enjoy your lunch 😊
