Boil and salt the water and add the pasta
Whisk the egg yolk and a small amount of cream together, add lemon juice to taste and whisk again
When the pasta is ready, drain and pour over the sauce. Combine well
Serve with a grating of Parmesan and sprinkling of coriander.
