Cover the sheet pan with a light layer of non-stick cooking spray.
Arrange the frozen taquitos in the pan with their folded sides down.
Pour the enchilada sauce over the frozen taquitos. I used the whole can, so my enchiladas will be very wet. You can add as much as you like.
Add a layer of shredded cheese. I used some mild cheddar and some pepper jack cheese. You can buy a Mexican blend of cheeses already shredded, if you want.
Put into an oven pre-heated to 375 degrees. Bake until bubbly and cheese is golden (30-40 min.)
Let them cool slightly and serve. Enjoy the game.

- 1.0 28oz can enchilada sauce
- 1/2lb Shredded cheese
