INGREDIENTS
Wash 3 cups of basmati rice and fry it in 2 tbsp canola oil till the rice is dry. Add 6 cup of boiling water, salt. Stir well, cover. Bring to a boil, cook on medium/low heat till rice is ready
If you follow this easy steps you will always get perfectly cooked rice and never mushy
Clean the chicken thighs from excess fat and cut into pieces about inch size. In a mixing bowl season the chicken with salt and pepper then mix in 1/2 cup flour. You can add more flour if necessary
Now heat 1/4 cup canola oil with 1 tbsp butter, then add the floury chicken to the frying pan
Fry on all sides till becomes golden. Make sure the chicken is fully cooked before adding chili sauce
Pour in 1 cup chili sauce and stir
Let it cook till the sauce thickens
Slice 2 romaine lettuce hearts
Place lettuce on a serving dish and top with steaming chicken. Garnish with sauce from the pan. Serve rice as side dish
- 2.0lb Skinless chicken thighs
- 1/2c Flour
- 1/4c Canola oil
- 1.0Tbsp Butter
- 1.0c Sweet chili sauce
- Salt & pepper to taste
- 3.0c Basmati rice
- 6.0c Water boiling
- 2.0Tbsp Canola oil
- 1.0tsp Salt
- 2.0 Romaine lettuce
