In a large pot, heat the oil on medium heat and brown the beef.
When the beef is browned, add the tomatoes and combine.
Add the chopped onion and the kidney beans.
Add the chilies and the water.
Add the spices, mix, then reduce heat to low and simmer, at least 30 minutes or until the vegetables soften and the flavors combine. Stir frequently.
Serve over cooked rice, quinoa, or noodles. Chopped lettuce also works. This can be used for nachos!
