How to make double chocolate, egg free muffins

I originally got this recipe from cooklikepriya.com but altered it to work for me and the ingredients I had, enjoy!

Sift flour, bicarbonate of soda, baking powder and salt, then gently mix, then mix in the sugar

Then in a jug mix the milk, oil and vanilla

Then combine with the dry ingredients and mix. Then mix in the chocolate chips

Then fill the muffin cases with the batter, I use a ice cream scoop to help evenly share it out

Then use a handful of chocolate chip chunks to sprinkle ontop each one, then bake for 16-20 minutes until fully cooked

Then melt the chocolate chunks over a sauce pan and gently drizzle over each muffin for extra indulgence

Then sprinkle with icing sugar to finish. Walla you Are done :D

I've also found that if you use a shot of Baileys liquor it can change simple muffins to adult ones 😝 or you can mash two ripe bananas to make chocolate and banana muffins yummy!
