To make the cupcakes, first preheat oven to 180 degree C (350 degree F).
Line a muffin pan with cupcake liners, preferably blue in line with the theme.
Beat the butter (room temperature) and sugar in a stand mixer on medium high speed until crumbly.
Add vanilla extract into the batter.
Then add the vegetable oil.
Next add 2 eggs, one at a time, scraping down the bowl as needed and cream until well combined.
Lastly add the sour cream / yoghurt. This helps to make the cupcakes really moist and fluffy.
Mix until batter is in a runny consistency.
Slowly sift in the all-purpose flour, salt, baking powder and baking soda.
Mix with a spatula or wooden spoon.
Then slowly stir in the milk (room temperature) with the spatula or wooden spoon.
Mix until batter is JUST combined and smooth.
Divide batter into 2 portions. Place one portion into a bowl and drop a tint of food grade blue colouring into the batter. Stir till well combined.
Scoop the vanilla and blue shade batter into the cupcake liners.
Place the cupcake muffin pan into the preheated oven.
Bake for 15 to 18 minutes or until a toothpick inserted in the centre of the cupcake comes out clean.
When baked, remove the muffin pan from the oven and place on a wire rack to cool 5 minutes.
Then remove the cupcakes from the muffin pan to a wire rack to cool COMPLETELY preferably overnight. They are now ready for frosting!
To make the whipped topping for frosting the cupcakes, first prepare 500g COLD water and a packet of premix whipped topping. Otherwise you can also use buttercream frosting.
Put the premix whipped topping into a mixing bowl.
Add COLD water into the whipped topping in a stand mixer with whisk attachment.
Mix the COLD water and whipped topping at low speed for about 1 minute.
Then whip at high speed for 5 to 7 minutes or until stiff peak form.
Put half the whipped topping frosting into a piping bag.
Start the frosting by making a simple design on the COMPLETELY cooled cupcake.
Completely cover the top of cupcake with the frosting.
Continue to frost the other cupcakes with other simple design as desired.
Add some sugar sprinkles on the top, preferably blue sprinkles, in line with 'FROZEN' theme.
Prepare the Disney Frozen edible photo cupcake toppers.
Place the photo cupcake topper on the top of the frosted cupcake. Make sure to put a little frosting on the underside of the print before putting on the cupcake. And you're done!
Use different designs on the cupcakes.
Colour the other half of the whipped topping blue.
Again put the blue colored frosting into a piping bag.
Frost the cooled cupcake with simple design of the blue frosting to get an icy feel ... In line with the theme.
Top with Disney frozen edible photo cupcake topper.
Put the frosted cupcakes into the refrigerator when done to allow the frosting to solidify.
