Grab, dill, shallot, bay leaf and peppercorns
Peel shallot
Slice
Crush peppercorns
Put all in a pot
Add about 200ml white wine
Reduce by 2/3
Add diced cold butter bit by bit off the heat by shaking the pot
Add more as it melts and emulsifies
Add more
Then it will look like this, I added around 200g butter
Squeeze of lemon juice
Some chopped dill
Bit of salt
And pepper
Give it a wee stir and your done! Enjoy
