Preheat oven to 375°F. In a stand mixer beat sugars, butter, egg, and vanilla extract on medium speed.
Add flour, baking soda, and salt to your mixture. Continue on medium speed.
Dough will appear thick once incorporated.
Time to add your chocolate chips and any other unmentionables you so desire to add, (nuts.) I am a firm believer in a "nut-free" cookie. There, I said it.
Cover cookie sheet with non-stick aluminum foil. Add a spoonful or so of dough (depending on your desired cookie consumption) about three inches apart. Bake at 375°F for 8-10 minutes.
Remove from pan and transfer to cookie cooling rack. Allow 2-3 minutes to cool. Pairs well with a scoop of vanilla bean ice cream, (duh.) Enjoy!
